Is he using Safari for browsing? If so, you can pull down History at the top and see what pages he's visited for the last week. This is easily erased (Clear History at the bottom of the menu) and Safari can be reset and the cache cleared (under Safari menu).

IE should have the same capabilities (the Go menu lets you see the history for example).

There is also a commercial product called Spector (http://www.spectorsoft.com/products/Spector_Macintosh/index.html) that they claim:

For Safari, go back into Preferences in the Safari menu and select the Security tab. There is a Show Cookies button there.

Similarly, you can find a cookies list under the Preferences selection in the Explorer menu.
