You absolutely can. Once you have the font applied, the color is in the properties. Now, (as I re-read) if what you want to do is change the color while in Motion 2, it's pretty much the same, but it's more intuitive in terms of setting the desired color. But, (re-reading again) if what you want to do is a color change while the text is moving ("in motion"), then you'll want to do that in the FCP timeline after creating an alpha channel in the LiveType project. One easy way to move the color around is to add the Color Corrector filter to the clip and keyframe the desired change.
