Mac Pro 2.66 Quad vs G5 2.0 Can't Post

How much more speed will I get in doing rendering, exporting and compressor with HDV material? Is it worth selling my current system and buying one?

1st up, be sure you're using the Apple Intermediate Codec to capture/edit HDV material, don't do it natively. There's no image quality loss, there is faster editing/rendering. No conforming when you encode for DVD authoring, but there is if you have to go back out to tape.
