Does anyone know where to find statistics on the size of the 'business and
education' video/DVD/multimedia creative/production industry? And
projections for the growth or shrinkage of this industry?

I have been trying to find that too. The only way that I know to get
reliable information would be to contact public and/or academic reference
librarians,especially if there is a large univerisity near you. If they have
difficulty finding it, for a small fee you can have the librarian
do an online database such as Lockheed Martin, whichever they
suggest. I want to find out the average incomes of wedding and
event videographer's myself. Your question should be found for
free.

The only reliable way I know is to contact a public/academic
reference librarian, especially is there is a large university
near you. They should be able to find this information for free.
I am trying to find the average income of wedding videographer's
and may have to pay a small fee, if the reference librarian
has to use a large online commercial database, such as Lockheed
Martin, or which ever database they think would have the info.
