Manual Exposure question , info on VX2000 ??? Can't Post

Hi
I have a Vx2000, and i whant ot know how is it possible to got the best picture quality in manual mode. I know about hte zebra function, but when i put the exposure at +3 db or 6 it<s seem ok, but at more i can see the granularity of the picture .. Any advice or comment ? I don't understand very well this operation.
For info, i shoot all time in 16:9 with wide angle from Sony and i make my white balance manualy.
