when I record the date and time are put onto my tapes on the bottom right - how do I get rid of this

The Date/Time are only shown on playback and are not 'burned' into the video picture You need the remote to cancel the display of 'recorded data'. It's all in the manual as Bob states, and you can find a manual at http://www.henrys.com/manuals/
