Peter, The best thing you can do for good sound is to get the mic off the camera, and get it up close to the source of the audio. NO microphone, including very expensive professional models, does a very good job at picking up sound more than about 48 inches away (unless you start talking about parabolic mics or some such). This might mean getting a wireless mic, or a handheld, or any of a number of solutions, depending on your particular shooting situation. For wind, the fuzzy "muffs" sold for mics do a great job. You can get these for anything from a lavalier mic to a shotgun mic inside a "blimp" enclosure on a microphone boom pole. Or you can make your own with some fake fur from the fabric store.
